Move aside exotic international dishes. Here’s a cuisine that can give signature Indian dishes a royal run for their money. Shocking but interesting, these dishes come from the ‘tribals in the jungle areas of Madhya Pradesh, Orchha, Jhansi and Indore.

The luscious flavors of Bundelkhandi cuisine brought Mr.Vinod Dua with his team of “Zaika India Ka” of NDTV to Amar Mahal,Orchha and left them licking their fingers!!

Shot on July13th and 14th, 2012 at Amar Mahal premises, you can follow the telecast of Bundelkhandi food episode of “Zaika India Ka” in the month of September.

Termed as ‘tribal cuisine experience’ the uniqueness of the taste lies in the style of preparation; the use of raw materials and extensive consumption of different types of millets. Bundelkhandi cuisine claims its roots back to the Jain cuisine.

The specialty is the unique amalgam of wheat and milk with local culinary products. Bundelkhandi cuisine extensively uses clay pot for the preparation of their food and the fact that it is cooked on firewood gives it a unique flavor. The famous dishes of the region are Kunde Ka Bhatta, Murar ka kebab and Tapu. The rice variety is also unusual, one famous being the Kodu til ka bhaat. The two types of rice widely used in this region are Kodu and Kudki. Kodu til ka bhaat is a preparation of rice with black sesame.

Most of the dishes contain very little oil and no use of artificial flavors. The dal prepared from green sprouts is to be tried. The kunde ka bhatta is somewhat similar to the traditional baigan ka bharta but it has a different steamed feel to the dish. Also the use of the green egg plant gives the dish a bland taste. The puris of the region are made from bajra and jawari and should be tried.  In the non-vegetarian range, fish is generously served. Some dishes are Bhunji Macharia, Macharia ke kebab or Machariya tarkari.

The Bundeli gosht and Sighdi wala kukra are two dishes that need a special mention. They go well with the masala rice.

The desserts are a few but nevertheless each of them should be tasted. The best of them is the Rass kheer a sweet dish which is prepared by mixing the extracts of the mahua flower with milk and millets no sugar is added in this.

Orchha’s grandeur has been captured in stone, frozen in time a rich legacy to the ages. It was founded in the 16th century by the Bundela Rajput chief captain Rudra Pratap who chose this stretch land along the Betwa River as an ideal site for his caption of the succeeding rulers. From here the view of soaring temples spires and cenotaphs is spectacular.

Orchha’s fort complex approached by a multi-arched bridge, has three palaces opened quadrangle.

RAJ MAHAL

Situated to the right of the quadrangle this was built by Madhukar Shah, the deeply religious predecessor of Bir Singh Ju Deo. The plain exteriors crowned by chattris, give way to interiors with exquisite morals, boldly colorful, on a variety of relies themes.

Ram Raja Mahal- Madhukar Shah’s wife once had a dream that she should install the idol of Lord Rama at Orchha, which she brought from Ayodhya. It was kept in the palace, now known as the RamRaja Temple which is the only temple where Rama is worshipped as king.

CHATURBHUJ TEMPLE

The temple with its wonderful improvised style, and its magnitude, dominates the town area of Orchha. As its name implies, it is dedicated to the “four armed” Vishnu and its layout visually reproduces these four arms. Built by Bir Sing Deo (1606-1627), the temple stands on a huge stone pedestal, about 15 ft high, reached by a large flight of steps leading up to a porch.

LAXMI NARAYANA TEMPLE

The interior’s contains the most exquisite of Orchha’s, wall paintings covering the walls and ceiling of three halls, these murals are vibrant compositions and cover a variety of spiritual and secular subjects. They are in an excellent state of preservation with the colors retaining their vivid quality.
