Bundelkhandi Gourmet Delight at Amar Mahal Orchha!

The beauty of traveling through the world is to enjoy things that bring you joy. For some, it is adventure or an excursion or may be shopping or some just want to hit the town and get lost, especially, when the place is like Orchha! I is one destination where you want to forgo your maps. But there are many who savor local flavors while travelling and focus on exploring traditional and authentic cuisines of the place, Isn’t it? While travelling to this region of Budelkhand it is obvious for us to learn about people’s taste and what they eat.

Typically to taste local cuisine of any region, street stalls and markets are the best way to go but the food safety is a major concern for many. But relax, when you are at Amar Mahal, Orchha there is a way for safe, delicious and authentic Bundelkhandi feast served right on your table without hunting anywhere else.

We are glad to introduce to you our Master Chef Tulsi Das who has designed a tantalizing Bundelkhandi menu for the food aficionados in Orchha.

Allow us to share some unexplored flavors of Bundelkhand directly from the kitchen of Amar Mahal 🙂  Though there are plenty of delicacies in this region but these few stand apart.

Bada– Bada is made up of soaked and grind lentils with added salt, red chilli and cumin seeds to it. The batter is tapped on hand before it is deep-fried. The crispy thin bada’s are then soaked in water for some time. Unlike north Indian Dahi Bada instead of curd here buttermilk is used to put Bada’s giving it a liquefied look.

Baigan Ka Bhartha– Though a common preparation in every household Bundelkhandi Baigan Ka Bhartha is special with its smoky flavor. This simple and tasty preparation of mashed aubergines cooked in less oil tempered with cumin seeds, bit of onion, garlic, green chilies, and tomato tastes really amazing.

Mattha Ki Arvi– Yogurt and buttermilk is the major ingredient of Bundelkhandi food. In a hot country like India where stomach bugs were easy to pick up, yogurt acted as an ancient antibiotic.

Dahi ki arvi tempered with cumin seeds, whole red chili is an awesome, delicious and healthy recipe.

Kadula– Poori is one such dish that has travelled the length and breadth of India and we all enjoy this without any guilt. There are many different kinds of Pooris and Kadula is its Bundelkhandi version, which is prepared on special occasions. The dough made up of flour, urad dal powder and salt is used to make the dough. The dough is then made to small balls and rolled out in small flat circles with a rolling pin, and then fried in hot vegetable oil. These deep-fried kadulas taste out of the world.

Pulao– Basically a rice preparation Bundelkhandi ’Pulao’ is made up with added vegetables (Potato, Carrot, onion, beans) but no spices except salt and Tej patta for aroma. The uniqueness of the entire affair is in the freshness and authenticity of the ingredients used.

With just the look of it one would want to have it immediately 🙂

Non-vegetarians don’t lose your heart, Bundelkhandi food is never complete without Bundelkhandi Gosht/Chicken.

Bundelkhandi Gosht- This is a local Bundelkhandi delicacy of tender lamb pieces cooked in a thick red onion gravy and coarsely ground species.

Bundelkhandi Chicken – A light chicken curry cooked with tomatoes and fresh coriander.

The dynamic changes in our climate, our ‘no time to relax’ lifestyle and crazy eating habits are unfortunately very much affecting our health conditions. Despite recent reports, there are numerous valid reasons to buy and consume produce with lesser pesticides (and better taste, and maybe even more health-promoting compounds).

At Amar Mahal Orchha we have our small organic garden and farm where an abundance of seasonal herbs, fruits, vegetables and cows’ fresh milk provide the chefs and baker with fresh produce on request almost every day.

Traditional vegetables, to name but a few such as Tomatoes, carrots, ginger, lady finger and, potatoes and  are grown along with  spinach, mint and endless variety of herbs from parsley, coriander to basil. Our fruit basket and salad platter is made delicious with freshly plucked papaya, banana, mud apple (cheeku), lemon and sweet limes.

Navratri Celebration in Bundelkhand

Navratri festival is celebrated with great fervor across India, especially in Gujrat and Rajasthan, but there is a region in central India called Bundel khand where the significance of this festival is a little different and sacred. For the agrarian community who inhabit the central Indian region known as Bundelkhand, the Navratri festival is the time to raise the hope high.

To propitiate the goddess, the people build ‘Ghatts’ which are earthen pots stuffed with a local variety of grass. These ghatts are placed at locations in the village considered holy – in the vicinity of the temple, under the banyan tree, in the courtyards of the houses etc. They are allowed to remain there for nine days of the festival and on the ninth night, are set afloat in the nearby ponds, lakes or rivers.

While the most religious and zealous tend to undergo grueling tasks like fasting for nine days or crawling on their knees across the entire village, most believe that the best way to propitiate the goddess to is through song and dance.

Every night, the people gather in the community space. The nagara and the dholak (drums) are out. Folk songs ring through the air. Everybody dances till they can’t dance anymore. It’s almost like a fever in the air of bundelkhand. You can observe the locals and visitors filled with a never-before and never-after wave of hope and joy while dancing and making merry. The nine days of Navratri are some of the best festivals to be attended in the colorful region of Bundelkhand.
